What is Nigari?

Nigari according to chemical structure is magnesium chloride (MgCl2), obtained in a process of evaporation of sea water, where due to evaporation is lost sodium chloride, and the residue which remains is magnesium chloride.

How does it look nigari?


Magnesium chloride is very reminiscent to sea salt, because it is the crystal structure and according to shape and color reminiscent of coarse crystals of sea salt.
